Beat together all filling ingredients until smooth
Combine first 5 cookie ingredients; mix well
Mix remaining cookie ingredients separately
Combine wet and dry mixtures into dough; refrigerate 30 minutes
Preheat oven to 300°F
Roll dough thin and cut into circles
Bake on greased tray for 10 minutes
Cool 10 minutes before removing from tray
Spread filling on half the cookies; top with remaining cookies
Refrigerate to set
