  • 240 g Unsweetened Soy Yogurt
  • 1 1/2 tsp Salt
  • 3 tbsp Tapioca Starch
  • 3 g Agar-Agar

Instructions

  • Start by soaking the cashews in water for approximately 2-3 hours. Once soaked, drain the water.

  • In a blender, combine the soaked cashews, soy yogurt, 120ml of water, and salt. Blend until the mixture is smooth and creamy.

  • Transfer the mixture into a bowl, cover it with a plate, and let it ferment at room temperature for 24 hours. The mixture should develop a tangy, cheese-like aroma during this time.
  • After 24 hours, stir in the tapioca starch until well incorporated.

  • In a small pot, dissolve the agar-agar in 120ml of water. Bring the mixture to a gentle boil, then let it simmer for 3 minutes.

  • Slowly pour the cashew-yogurt mixture into the pot while stirring continuously. Cook the mixture over medium heat, stirring constantly, for 5-8 minutes. It will thicken and become stretchy, resembling traditional mozzarella.

  • Prepare a bowl of ice water. Using a large spoon or an ice cream scoop, scoop out portions of the mozzarella mixture and gently place them into the ice water. Allow them to sit for 30 minutes.
  • Once cooled, transfer the mozzarella balls into a saltwater solution (3g of salt dissolved in 100ml of water) and store them in the refrigerator.
