Family: like branches on a tree, we all grow in different directions yet our roots remain as one.
How about opening doors every weekend as a new job? It looks like I just got promoted from a housewife to a door woman on these days. Since weekend is the time when my son is available to play, our doorbell doesn’t stop ringing. We even joked that he should sell tickets for his time. These kids are so cute. They are loud and funny, yet they are also well behaved. Their voices are deep and they talk in languages that only the group will understand. It is like they are eating their words. They are in the fine line between being a teenager and a little boy. I can see them growing up to be a very fine young men. It just gives me so much joy to see these little boys lounging comfortably in the living room, playing Legos, video games and then they go out and run around the neighborhood. When they come back, the house reeks with sweat smell. I am not complaining. I just make sure that the scented candle is available within reach when these kids are around to keep me breathing well. I also make sure that foods are available to grab when these kids get hungry.
You see, I never had this kind of childhood. My mom was a little strict about my friends so our house was not a hang out place at all. Before I got married, I have this idea of making my future home a place where my children’s friends can hang out. And that dream came true.
Since I am talking about dreams coming true, I am going to share to you one of my experience when I was little. I was still in PI ( Philippines ) then. I received this youth magazine from the US. This magazine consisted of so many beautiful pictures about America. Browsing in that magazine, I saw my first snow. That is when I started dreaming about living here in the US just to experience wearing those thick jackets, scarves and to feel the coolness of the white and cottony snow. What I did then was, I cut those pictures and pasted them on the wall near my bed. I saw it everyday. I dreamt it everyday too. When I went to college, I made sure that I will go to medical school because it was the only ticket for me to work and come here. Now here I am raising my kids and experiencing snow each winter. Every winter is just another reminder that dreams do come true. That is why I believe in visioning. Currently, I do not dream about snow nor winter to arrive.In fact, I wish there is no winter. I also have different set of dreams now. As a mother, I have dreams for my children and I also have a dreams for myself. Here is my vision board.
That girl on the left side Katie Quinn Davies, I want to be like her.She is a famous Australian photographer. It would be nice to be taken under her wing and learn from her. As you can see, my pictures are still novice. Specially that picture of my vision board, it is blurry. An indication that I still have a very long way to go.I am trying to learn some of her photography style. But they are just difficult.Maybe in time, I will get it.
The guy in the right is Tim of Lottie and + Doof Blog. I love the way he writes. When I read his posts, I laugh my heart out. He is that funny. He weaves his words so well. As you know, English is my second language, so I still have to read millions of books or read thousands of other blogger’s entry before I can be at his league. Still, I dream about writing like him.
Of course, Oprah is there. That small orange color below. Too bad, it is not that clear. But it does not mean she bears a small part in my dream. I like her wit, intelligence and character. I love her inner strength too. After all the abuses and struggles she had been through, she came out as a winner. So I want to embody her character.
The rest of the writings are just some of the things that I want to become. Although I am not sure how these dreams can happen, because as you can see, they are so lofty. Specially the Katie Davies one, but hey, maybe it might come true, right? So how about you make your own vision board too. Dreams are free. Might as well use it.
Anyway, last Friday night, I prepared this easy spaghetti dinner because my daughter’s friends came over to watch Dr. Who marathon in Netlfix. I made the spaghetti sauce with ground turkey to make it healthier and Velveeta cheese to make it creamier. I also I added brown sugar to make the pasta sauce sweeter. We Filipinos like our pasta sauce sweet. We want our pasta sauce to be somehow similar to Jollibee ( famous food chain in the Philippines), which is really sweet. We make our pizza sauce sweet also. If ever you go in PI, you will be surprised how sweet our pizza and how sweet spaghetti sauces are. While preparing this dish, I was kind of apprehensive if my daughter’s friends will like the sweet type spaghetti dinner. Evidently, the kids liked it because they were eating it until 9 PM that night. I am sharing the recipe with you today. I hope you will like it too.
Spaghetti Dinner Recipe- Ground Turkey Pasta Sauce
1 box (12 oz ) whole grain spaghetti
1 can ( 24 oz) Garlic and Herb pasta sauce ( any flavor will do)
1 lb ground turkey breast
2 cups mushroom ( cut into small slices)
5 cloves garlic ( ground)
1 medium size onion ( chopped)
3 tbsp brown sugar
1/4 tsp salt
8 oz Velveeta Cheese ( Velveeta usually goes with 16 oz, so just cut it to half)
3 tbsp cooking oil
- Cook the spaghetti per box’s instruction. Set Aside.
- Meanwhile heat oil in a large sauce pan then and in garlic and onion. Saute’ for around 2 minutes.
- Add in ground turkey and let it cook through.You can tell that it is cooked when it is not pink in color.
- Add in mushroom. Let the mixture simmer until the mushroom turn dark brown in color or become soft.
- Add in tomato sauce, Velveeta, sugar and salt.
- Let the Velveeta cheese melt and mix the sauce until the cheese is completely incorporated.
- Let it simmer for around 15 to 20 minutes. Serve on top of the pasta.
- Serve and Enjoy.
