Before these potatoes will turn into something that may eat my whole clan, I have to make something out of them. I made a potato recipe, just perfect for a healthy dinner.

And how I am glad that these potatoes have turned into lovely and colorful pizza in a boat… My son ate these for breakfast, lunch and dinner. I was astonished. I thought the “monster ” above, ate my son and “IT” replaced him with a new one. My son who hates potatoes did not even notice that he gobbled everything including the potato skins. 8 bake potato skins ( from 4 pieces of potatoes cut in half. Please check )
1 cup pizza sauce
1 cup mozzarella cheese
1/2 cup pepperoni
1 tbsp minced parsley


Preheat oven at 425 F . Place potato skins on a baking dish. Add on mozzarella cheese and pepperoni. Bake until the cheese is bubbly. Garnish with parsley. Serve hot and enjoy!
