Cookie Cake – with White and Dark Chocolate Chip

I am not a really a fan of cookies because of the loads of butter that is usually  needed to make them. Or when you buy cookies from the groceries, I do not know what ingredients they are adding in the cookies, so I do not buy them at all.

Lately, my children have been clamoring about a chocolate chip cookie in the groceries. Every time we got there, they wanted it. After all these unrelenting request, I thought I will bake them my own chocolate cookie version. It will look like a cake, so I will call it chocolate cookie cake. It has mini chocolate chips and mini white chocolate milk. No butter nor shortening kind of cookie. So it will not be as fattening and unhealthy as the store bought ones.

After baking my very own version of chocolate chip cookie cake, and  since we  do not have a way to gauge if it is at par with the store bought ones, my family concluded that this is delicious and maybe similar to the cookies from the groceries. I wish I could make myself buy those store cookies to be able to compare, but I just cannot make myself to do so.  So here it is, my family’s version of chocolate cookie cake.

Ingredients

  1. 2 cups bread flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 2 eggs
  5. 1 1/2 teaspoon vanilla extract
  6. 1/2 cup semi sweet chocolate morsel ( I used Nestle’ but you can use other brands)
  7. 1/2 cup classic white choco chip ( I used Ghirardelli for this recipe but you can use any brand)
  8. 1/4 cup plain Greek Yogurt
  9. 1 cup brown sugar
  10. 1/2 cup white sugar
  11. 1/4 cup cooking oil

Instructions

  • Grease a 5 x 5 or 7 x 7 baking pan. Set aside
  • Pre heat oven at 325 F.
  • Place the flour, white sugar, baking soda and baking powder in a small bowl. Mix them completely using a wire whisk. Set aside.
  • In another bowl, place in egg, yogurt,vanilla, brown sugar and cooking oil. Mix so that the sugar will be dissolve. Pour mixture into the flour mixture. Mix ingredients until totally incorporated. Add in the choco chips and mix.
  • Pour mixture into the greased pan.
  • Bake for 10 to 12 minutes. Remove from the oven and let the cookie cake sit in the pan to continue to cook.
