Thanksgiving is over and now, we have to tackle on those leftover turkey that needed to be consumed. This recipe of leftover turkey is not much of a work, since we already cooked the turkey. So what are we to going to do with it?

I’d say make a sandwich out of it. Everyone in your family will love this. We usually have pulled pork for our sandwiches , so this will be a different different from the norm. The taste is almost the same, but can I say it is healthier because it is turkey ? The recipe is very very easy to make . You do not need to make the barbecue sauce. You can use the ones sold in your grocery store.

Now you will have a reason to cook/bake turkey even if it is not Thanksgiving. This recipe can become a good candidate as go to recipe for large parties throughout the year. You can adjust the taste according to your liking. For my family, we have the sauce on hand so that we can just pour it into the sandwich if we want more of it.

As for the remaining turkey leftover I have left,  they are separated in various container and are safely tucked in the freezer for the next turkey leftover recipe. Hmmm… what can that be?

Do not overcook. We just want to heat the sauces for this. You can even use the microwave to do this.

Ingredients

2 cups leftover turkey – pulled
1/2 cup barbecue sauce
1 tablespoon mustard
basil/cilantro for garnish ( optional)

Instructions

  • Place barbecue sauce and mustard in the saucepan and heat them.
  • Add in the pulled turkey and mix thoroughly with the sauces.

I cannot agree more with this quote, yet all the time I fall short from it. I give advice to my children. Every well intentioned mothers do so.  I am doing it because I do not want them to lead a wrong path. I want them to be safe. I want them to be protected from bad influences. I am sure they are tired of listening to me as manifested in their responses, but I have to do it because it is for their own good.

My kids are now in the age when they want to be independent. I noticed that my words do not matter anymore. So I shifted my strategy from words to action. Though I still give them advic, I am  making sure that I vicariously live the words that I say. I eat healthy, I exercise everyday and  I work hard in my studies. I  also try so hard  not to be easily stressed out.I do not say bad words and I show them my faith in God.

I am far from being an excellent mother but I am trying to be a good one. There are things in life that I can change, but the mark I leave to my children lives on, so I am trying my best to leave a good impression. With the daily stresses, it is not easy, but I want my children to see that I am trying my best. I hope that my toil will not be in vain. And I hope and I pray that my children will say that indeed, I am a good mother.



BANANA BREAD CAKE RECIPE WITH PERSIMMONS

Ingredients

1 banana
1 medium size persimmon
1 tablespoon raisins (optional)
1 cup bread flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup Unsweetened Almond Milk
1/2 cup plus 1/8 cup white sugar
3 tablespoon chia seeds
1/2 teaspoon vanilla extract

Instructions

  • Pre heat oven at 350 F
  • Grease a small sized square baking pan 5 x 5 ” size.
  • Mix the flour, baking powder and baking soda in a medium sized bowl. Set aside.
  • Peel persimmons and slice into small pieces. Put into food chopper machine.
  • Slice banana and add into food chopper. Ground them together until smooth.
  • Pour the milk into a small bowl. Add in Chia seeds, sugar and vanilla extract. Pour mixture into the flour mixture and mix completely.
  • Fold or add in the fruit mixture and add in raisins if using.
  • Pour into a prepared pan
  • Bake for 15 to 20 minute or until toothpick or skewer will come out clean.
