Healthy Breakfast -Watermelon Kiwi and Banana Smoothie

My husband wakes up earlier than me because he has a job. So pretty much, I do not know what is his routine in the morning. As far as I know, he makes his morning coffee, gets his lunch, which I prepared the night before, kiss us all goodbye and off to work he goes.

One morning, I was woken up by my relentless coughing and I was not able to go back to sleep. I grabbed the Ipad and read my morning news which contain all these gory news you can find about the world plus some entertainment news in it which make this site more horrible. My daughter described it is the most depressing news site she ever saw. I agree.But this has been a really bad habit for a long time that it has been so difficult to shake off. Gratefully, I was able to wean myself out of it.

When my husband woke up, I ask him if he wants to use the Ipad, and he said yes.I gave it to him and I was surprised that he opened something surprising. He opened the apps and went to Inspirations. This is an app that he downloaded to the ipad which contains daily Bible verses with very beautiful landscapes in it.

Aha! so this is one of his ritual everyday. Inspirations app.

You see, my husband is a very positive person, which is contrary to me. Opposites really do attract, huh! He is very successful on whatever he does, he is peaceful and calm.My children respects him. He makes friends with quality people. He says something and he stands by it. These are the reasons I respect him . Oftentimes, I want to morph into his character. As I watch him reading the verses, I thought this might be the reason his days are always flowery. Contrary from my days which are always mediocre. I was so inspired by this that I vowed to do the same – Instill my day with God’s word first and maybe, my days will become merry too.

Seeing this, I was inspired to write what not to do at the beginning of my day. These are just the simple tools that I learned based from my experience and what I observed from my husband. These are just the things that worked for me and may not work for you. We can always learn from each other, so if you have rituals in the the morning that helped you gear for the day, please share.

5 Ways to Start Your Day

Do not read entertainment news, just yet. If you are addicted to it like me, set that aside for later or not read them at all. From my experience, reading this kind of news can bring havoc on your day. You cannot help but get irritated of these actors and actresses who in spite of their successes, they harm themselves with addiction.

Do not scamper around. Prepare everything a day before. I actually had this one nailed down. I prepare my husband’s lunch the night before so that I do not have to worry about it. I also wake up a little bit earlier so that I can plan the day’s activities.

Do not look at the living room. Well this trick I need to master. It annoys me so much to see that those throw pillows on the couch are not arrange well.

Before I go to sleep, I make sure that those throw pillows are comfy and are on their proper sides on the couch. But for some reason that I cannot put my finger on, in the morning, hose throw pillows are not anywhere near to where I intended them to be.What I am trying to say is: try to ignore the chaos in the house or do not sweat the small stuff.

Do not open your Facebook account just yet.I do no check my Facebook early in the morning. All those travels that your friends went and all those shoes and new clothes that they got can just make you jealous and think of how lucky they are to not be you. The Bible says, “Jealousy rots the bone.” I purposely cut my Facebook time for this reason. Now, I only use Facebook to talk to my family in the Philippines and keep in touch with my friends and post on what is cooking in my kitchen.

Do not eat heavy breakfast. I know so many people eat heavy breakfast to energize them throughout the day. But this does not work for me. Eating heavy breakfast, for me, is just a permission to eat more food throughout the day. So it is a no, no. We eat light breakfast in my household. That is why I bake light breads and cakes for my husband and smoothie for my daughter and I.

Yup, those are the simple things that I do not do for my own sake. Next time, I am going to post My Dos in the Morning.

In the meantime, I am going to share to you one of the smoothies that I prepare for my daughter and I. There a so many variations on how to prepare smoothies and this is one of those. Before you make this, make sure that you freeze the banana. It just gave a cooling effect as you sip your smoothie by using a straw. I usually slice the banana into bite size pieces and freeze them so they are ready to use when I need them. Watermelon – Kiwi and Frozen Banana Smoothie

Ingredients

1 cup coarsely chopped seeded/seedless watermelon
1 kiwi fruit, peeled and cut into pieces
2 ice cubes
1 ripe banana, frozen and cut into chunks
1/4 cup chilled apple juice

Instructions

Place all ingredients in the blender and blend until smooth. Pour mixture into glass and enjoy!

Notes

I usually use fresh apple juice and juice it from a juicing machine. I f you do not have the machine, you can use the bottle juice.

When I was in the Philippines, I did not really hear about Rellenong Manok. I only heard its fish counterpart which is Rellenong Bangus. So when I saw this recipe in Adora’s Box, I was curious and got myself into ” baking mode.” The most difficult part of this meal is the deboning of the chicken. It is not actually that difficult when I thought about it, it just gets messy and when you have 3 people clamoring for their food to get done, it gets frustrating.

I cut the chicken through the back using a sharp knife. I think using a kitchen scissor is the easier way to go, but since I cannot find my kitchen scissor, I just had to make do of the knife. I had some croutons in my freezer so I used that as stuffing base instead of the bread crumbs. Actually, I changed the recipe on whatever I got in my pantry.

I did not really have much idea what a chorizo was, so I presumed it is a Chinese sausage- which is easily accessible in our Asian market. I used Bratwurst sausage to add more taste in the stuffing. I brined the chicken for 4 hours and when we arrived from church, I started working on getting done with the meal.

The stuffing was different from the stuffing they have here in the US. It had a very authentic Filipino taste. Remember our Filipino dishes, they always have different taste in each meal, this accomplished that. This will be a subject of discussion in your dinner table, because it is deliciously unique. The additional raisin in the stuffing made the stuffing hard to forget. The Chinese sausage tied all the taste into very well laid out combo of sweetness and saltiness. A week after tasting this meal, you will be thinking, “How did I thatt symphony of tastes came about?” It will stir curiosity on you taste buds. For me, at least. I say this is worth the time and effort you put into it. This meal is so delicious!

Rellenong Manok Stuffed Chicken for Christmas or Thanksgiving Filipino Roasted Chicken

Ingredients

2 cups crush/ ground Crouton ( I used garlic flavor in mine)
2 bratwurst sausage (slice into small pieces)
2 Chinese style sausage (slice into small pieces)
2 stalk celery ( minced)
1/3 cup figs or raisins
7 cloves garlic ( crushed)
1 small onion
3 tbsp cooking oil
3 boiled egg
1 whole chicken deboned
For Brining:
1 lemon
salt
pepper

Instructions

  • Chicken Preparation:
  • Using a scissor or a knife cut the chicken at the back . Debone chicken. I found that it was easier to slice the chicken at the back. Leave the thigh and wing bones.This will give shape to the chicken.
  • Let the chicken brine in the ref for 4 hours or more.
  • When ready to cook, drain the brined chicken and dry with a kitchen towel or paper towel to remove excess water.
  • For the stuffing preparation:
  • Place the oil, garlic and onion in a large bowl and microwave for 3 minutes
  • Add in ingredients 1 to 5 and mix thoroughly .Cover and leave in the refrigerator for an hour or two.
  • Boil the egg and remove the shell. Set aside.
  • When Ready to Cook:
  • Place the stuffing on the chicken. And place the boiled egg on top.
  • Suture the chicken or use a skewer to seal the chicken and wrap it in a tin foil.
  • Bake at 325 for an hour then change oven setting to 350 and bake for another 1 1/2 hour or until meat temperature says 190
  • Serve and Enjoy!

Notes

To Brine:

Get a deep bowl, big enough to submerge the deboned chicken. Add in 2 tbsp or more, 1 lemon and lots of pepper. Leave in the ref for 4 hours or overnight.

Dinner Rolls

Once you chose hope, everything is possible.

I am the type of person who likes to plan. I purposely plan occasions a month, or a week before so that I will not be stressed out or worried. So I plan, and plan , then plan some more until I find myself losing some sleep and worry myself out until I am pulling my hair off due to stress… strange but it worked for me before until now.

Currently, it looks like my body is not strong enough to handle stress anymore. When I am stressed out, I get sick and I easily gets frustrated. So I decided to use plan Z ( my A to Y plan was to stress and stress some more) to relax.

I will give you one example of how ridiculous of a planner I was. My daughter was 10 years old then. It was our daily Sunday church service and I was surveying the church for boys who I plan to become my son in law. I have to knock my head off and tell myself , “Gosh your daughter is only 10 years old, get a grip!”

You may never believe how crazy it is, but this is true: Three years ago, the biggest price for lotto history was 320 million. I had never bought lotto ticket ever in my life but this time, I tried my luck. I happily told my husband that I bought a ticket and I got so excited about it. That night, I was thinking what will I do with the money if I win. The night passed to wee hours and there I was, awake with my eyes popping out due tiredness, yet I was worrying whether I will put the money in the bank or not, or, what will happen to my win if the bank goes bankrupt. When I told a friend about it, she laughed so hard thinking I was crazy. I thought I was crazy too.

Of course, I did not win that lotto price but those experiences reminded me how futile and planning wrongly can make me miserable. So now, I am trying to protect myself. I protect myself from futile plans by these Bible verses:

I got extra ones so I played with it by adding black sesame seed

For I know well the plans I have for you. Plans to give you hope and a future.
I can do all things through Christ who gives me strength.
If God is for us, who can be against us.

Dinner rolls for Thanksgiving

What is futile planning by the way?

For me, planning when done right is great . The Bible says, ” to plan and watch our steps.” But sometimes, I take planning to the extreme that even little “dot and commas” of my life’s path have to be PURRR- FECT! These caused countless sleepless nights and missed meals, which I totally regret.

To be honest, I am thankful that so many of my plans did not work out. Because it is humbling. It reminds me that some things are just beyond my control.

Perfect example of this is my plan to switch from stay at home mom to a working mother.I promise you, I did everything I could to be qualified for the workforce again; but for some reasons that I cannot fathom, it just did not work out for me.It looks like I am bound to be a stay at home mom for now. I will know the reason why I have to be here when I am able to pass through this crossroad. As Apple founder Steve Jobs said:

“You cannot connect the dots looking forward; you can only connect them looking backward. So you have to trust that the dots will somehow connect in the future.”

Now, I am throwing the towel on planning about my life. I said, I surrender, God. I will keep on doing what is right and do things the best I could. Whatever the outcome might be, I refuse to worry about it. I learned that life will always be uncertain no matter what. Having accepted this, I feel free! I tell my children to work hard and do their best and god will do the rest.

By the way, I am making rolls today. I planned and planned about this, I re-read the instructions so many times so that there will be no room for failure. The good thing about this rolls, they are not similar to life. This roll is certain to be a success, if you follow the instructions because it did for me. So here is my another success in baking.

Being a novice baker, I do not have the guts to experiment with regards to bread. That is why I am baking this roll as early as now to prepare myself for Thanksgiving. I want to make sure I will not make mistake on this bread on Thanksgiving Day dinner. Boy I say this is a success. This rolls are soft, fluffy and most, the taste is way better that the store bought ones. The kids and their friends gobble it up like there was no tomorrow. So please practice this now so that you will not be scrambling around when Thanksgiving Day comes.I promise you, these rolls are really good that you will be making more of these before Thanksgiving Day.By then,you will become an expert.

Dinner Rolls

Ingredients

2 sachets yeast ( I use fast rise yeast the one where you do not dissolve in water )
6 cups bread flour
1/3 cup white sugar
1 1/2 tsp salt
1/2 cup warm water
1 1/4 cup warm milk
2 eggs
1/2 cup melted butter ( 1 stick)

Instructions

  • Grease a bowl with oil. Set aside
  • Place ingredients 1 to 4 in a bowl. And whisk to mix the ingredients.Set aside.
  • Put egg, sugar and butter in the mixing bowl. Mix thoroughly until sugar is dissolve. Add the bread flour and salt mixture then add slowly the warm water and warm milk. Mix using dough hook. Mix until the mixture is soft and elastic. Place in the prepared greased bowl.
  • If you think the dough is sticky, it is fine.
  • Cover with plastic wrap or damp cloth and put it in warm place until dough doubles. About an hour.
  • After an hour, punch the dough and put in a floured surface. Coat your hand with flour and divide the dough into 24 pieces or a size of a gold ball.Arrange them in a slightly grease baking pan and let it rise again in a warm place for another hour.
  • Bake in Pre heated oven in 375 F for 25 mins or until the top is golden color.
  • Serve and Enjoy.

Notes

I use fast rise yeast the one where you do not dissolve in water Tips to make the dough rise: Heat oven to at 220 F for 1 minute then turn off. This will become the warm place where I let my dough rise. Place the dough there for one hour. Do the same if the oven is not warm anymore when you have to do it for the next 1 hour Adapted from Heart of Mary blog check here
